
It seems to be a constant battle as a parent to come up with new and interesting lunch ideas that our kids will actually eat! You want something quick and easy but high in nutrition to get them, or you, through their long afternoons. Sometimes, if we are feeling generous we might write small notes of encouragement to put in our kids’ lunchboxes. Which is sweet, until they start getting older and would rather die than have a note from mom. But you know what they say: Actions speak louder than words. So maybe by making one of these back-to-school lunches your kid might really get how much you care. Here, I’ve pulled together five of my favorite unconventional lunch ideas. Enjoy!
The Trail Wrap
Check out this new way to look at wraps from the Unconventional Kitchen. This may sound bizarre but it looks so tasty! All you have to do is smear peanut butter on a large wheat tortilla, stuff it with your favorite trail mix, you can add a few dried blueberries or other fruits and put it in a ziploc bag!
Turkey-Cheese Pita Pockets
Bon Appetit shows you how to spread a creamy cheese inside a whole wheat pita, fill with roast turkey slices, baby spinach leaves and cucumber slices for a delicious twist on the classic pita!
Kid Friendly Pasta Salad Makeover
Kids don’t usually turn down pasta, but Community Table shows you how to make a pasta salad full of whole grains, fiber and nutrients that you don’t get from your run of the mill white spaghetti noodle.
Captain Cold Cut
Leave it to guru Martha Stewart, this sandwich is the super sandwich of cold cuts. You will be jumping on lawn chairs in a single bound after this energy filled lunch. An array of salami, prosciutto, provolone, and fresh tomatoes and roasted peppers will make you mouth water.
Meat and Cheese Bento Box
Bento boxes rock. This is probably the most simple, yet delightful creation. Any tubberware container will do but this one is beautiful!
