Red lentil Hummus is a different take on a classic snack dip. Perfect to bring to any party invite

A friend of mine gave me a bag of red lentils last weekend.  I love lentils but have cooked very little with them.  I’ve made a lentil soup before, but that’s about it.  Then I stumbled across a red lentil hummus recipe and said to myself, “I can make hummus, just what I was looking for”.  Traditionally hummus is made of garbanzo beans, but you can really use any creamy legume.  Let me tell you, I was not disappointed when I was done.

Don’t be afraid of the hummus, it really is super easy to make.  Mine only uses eight simple ingredients and a food processor.  Dump in your ingredients, pulse a few times and you are good to go!  Hummus for everyone!  It really is the perfect potluck appetizer. 

Red Lentil Hummus is to die for.

I served my red lentil hummus with naan, an indian bread made of flour, typically cooked in a clay oven, but you can serve it with any number of things.  Pita, chips, sliced carrots and celery, all make great dipping sticks for hummus.

Ingredients
  1. 2 cups water
  2. 1 cup died red lentils
  3. 2 garlic cloves
  4. 2 Tbsp tahini paste
  5. 4 Tbsp olive oil
  6. 1 lemon
  7. 2 tsp salt
  8. 1 tsp paprika
  9. 1/2 tsp ground pepper
Instructions
  1. 1. Bring the water to boil in a pot. Add lentils and reduce heat to low. Simmer until all the water is absorbed, about 15 minutes.
  2. 2. Place lentils and the rest of the ingredients into the food processor. Pulse until smooth.
  3. 3. Spoon the hummus into a bowl and sprinkle more paprika on top.
  4. 4. Serve with bread, pita, naan, chips, vegetable sticks or use as a spread.
